M4A is Apple’s format for AAC audio. iPhone voice memos and iTunes use it; it is smaller than MP3 at the same quality. Only the audio of the MKV video is kept and saved as M4A; the picture is dropped. M4A is lossy; you choose the quality from 96 to 320 kbps. 192–256 kbps is enough for music, 128 kbps for speech.
